Salad

We always get at least two heads of beautiful lettuce in our bag. What else do you put in your salad besides lettuce? Lately, our salads have been just lettuce with dressing. Rather boring.

Nancy makes better salad dressing than me but I am going to weigh in anyway.

I usually use some combination of olive oil, balsamic vinegar, mustard, garlic, lemon juice, grated lemon rind and parmesan cheese. I use salt to mash the garlic so all I need to add is pepper. If we have any fresh herbs I might chop them and put them in. Occasionally I put in a tablespoon or so of mayonnaise if the rest of the meal is pretty light.

Last night we had some of the cauliflower with basil that I had cooked and Nancy tossed those with some vinagrette and put them in the salad. It was very tasty.

Something that I stole from I don't remember who is to use the olive oil that is used to pack sun dried tomatoes for salad dressing. Just keep adding more as you use it.

The House Dressing in the Fiddlehead cookbook is pretty popular. And if you hadn't made five gallons of it every other day for eight years you might actually like it.

sometimes I like just lemon juice and olive oil. sometimes, especially on butter lettuce, I like lemon and heavy cream. Always I prefer kosher salt and big pepper.
